Over the past twenty years in France, the issue of "animal welfare" has steadily gained prominence in politics and the media. In abattoirs, this trend has been reflected in the entry into force of EC Regulation 1099/2009, designed to strengthen, standardize and harmonize animal protection measures during slaughter operations. Given that abattoirs act as "regulatory crossroads", where multiple standards and forms of control coincide, we should ask what effects the additional regulations have had on slaughter work. How do abattoir operators manage to reconcile the demands of production and animal protection?
Drawing on a qualitative study carried out between 2018 and 2021 for a doctoral thesis in sociology, this webinar will look at two issues raised by the application of the regulations in cattle and poultry abattoirs: on the one hand, whether slaughter technologies match the different types of animals slaughtered, and on the other, the relationship between the monitoring of the animals' state of unconsciousness and maintaining continuity in operations.
